The mortar "JUJU mortier" from Yamatada Katouen was created by Kato Tomoya, the seventh generation owner of the kiln, and its most distinctive feature is its "hamon kushime" (ripple comb) grinding pattern, which was perfected over a period of about nine years of research and forging.

"The beautiful curved grating has ripples that allow the surimi to hit the grating firmly, preventing the ingredients from escaping while grinding, and allowing you to grind quickly with less force.

In addition, due to the manufacturing process, it is usually said that mortars work better when turned clockwise, but by using a ripple pattern on the grinding surface, this mortar combines design and practicality as it can be turned clockwise or counterclockwise regardless of your dominant hand.
