Founded in 1794, Yamatada Katouen has been making mortars for generations, with a focus on Takada ware, which is counted among the varieties of Mino ware. The straw ash JUJU mortier is a mortar created by Kato Tomoya, the seventh generation owner of this kiln. Its most distinctive feature is its "hamon kushime" (ripple comb) grinding pattern, which was perfected over a period of nine years of research and forging. The Hamon Kushime mortar took about nine years to develop
Many people have experienced that when they grind food in a mortar, the food rises to the top. The food can only be ground in the places where the mortar is against the grain, so the food that is not ground rises to the top.The beautifully curved grinding surfaces of Yamatada Katouen's "Ripple Comb" allow the grinding wood to firmly contact the grinding surfaces, preventing the ingredients from escaping while grinding, and allowing for quicker grinding with less force. Also, while it is said that mortars usually grind better when turned clockwise due to the manufacturing process, the ripple grinding surface allows grinding to be done by either clockwise or counterclockwise, regardless of your dominant hand. It also reduces friction on the ingredients, allowing for more fragrant and delicious cooking.

"Aoto" soil, suitable for mortars
Takada ware, which is one of the Mino wares, is made from blue soil called Aoto. Blue soil is excellent for making mortars, it is very durable, and when fired, it loses almost all water absorption. In addition, the soil has a rough texture, which gives it good friction.In addition, the mortar will wear down over time, but the unique particles of blue clay have the property of gently guarding against the sharpness of chips. For these reasons, Yamatada Katoen has been using this clay for over 200 years.

The shop name "Yamatada" was chosen by the first Tobei in 1794, when he branched off from the family and was conscious of the idea of "creating something from nothing." "Creating something from nothing" starts with making everything, starting with the kiln and the kiln tools. "Knowing Takada's clay well," and "originality and innovation." This is the philosophy that has been passed down to each Tobei and is the origin of the "Yamatada" brand.

● Before use
Before using a mortar, first make a "suribachi" (a small piece of mortar and pestle).
Soak the mortar and suriko wooden pestle in water to make them damp. Without any food in it, grind the wooden pestle clockwise and counterclockwise so that it touches the entire surface of the pestle. When the thin, weak areas between the grains are removed, the grinding is complete.
