Not only are they sharp, but the serrated blades make it easy to cut through slippery ingredients. The shaft (crimping) and blade (removing the blade), which are the lifeblood of the scissors, are carefully adjusted one by one by skilled craftsmen. All parts are made of rust-resistant stainless steel, and can be disassembled by rotating 110 degrees, so they can be washed thoroughly and are very hygienic.
