"Suribachi" (grinding bowls), "surikogi" (grinding pestles), and "natto bowls" have arrived from Yamatada Katouen, a workshop located in Tajimi City, Gifu Prefecture.
【Suribachi JUJU mortier】
This suribachi, featuring "Hamon Kushime" (ripple-patterned grooves), was developed over approximately nine years. The soft, curved grooves prevent ingredients from escaping upwards, allowing for efficient grinding with less effort. You can grind in either a clockwise or counter-clockwise direction, regardless of your dominant hand. Available in 4-sun and 6-sun sizes.
【Sansho Grinding Pestle】
These pestles are made from sansho (Japanese pepper) wood, personally harvested by Tomoya Kato from the mountains during the harshest winter months when the wood has minimal moisture. Sansho has long been considered suitable for pestles, and its subtle aroma gently enhances the flavor of your dishes.
【Natto Bowl】
A dedicated bowl designed to make natto (fermented soybeans) even more delicious. Fine grooves on the inside incorporate air as you stir, resulting in a fluffy texture. The slightly larger pouring spout allows for smooth transfer to another dish.
